Most of my gastronomic journey has been spent as an executive chef for some high-end hotels running their business in Indonesia. The trip took me further to a cruise line based in America, allowing me to explore deeper the expansive world of culinary art in relation to its cultural background. My experience begun after completing my study at a tourism school. Slowly, I found my life-long passion in culinary and travel, until I started my own restaurant business in 2009. That first born is named Bali Cardamon. It was another big start to my career, which then lead me to open Glaze Restaurant 3 years later, followed with Chef’s Room 7 years after.

Talking about Passion
Over the time spent with food, I realize: food can bring peace. Presenting food in front of guests and family are both happiness to me, as it makes them smile and feel the comfort. With food on the table, we can talk about peace. And I love to share what I got for free, including knowledge and spirit in culinary, especially in local and Indonesian food cooking. I envision local delicacies to be enjoyed by many throughout the world and hope that Balinese local cuisine, in particular, to present well in the world. Therefore, it is my dream to see more young people mastering the art of local culinary rather than modern western food. To attain it, I’ve learned a lot from both experienced experts of culinary art and those moms who carefully craft traditional foods in their home kitchen. In the process, I never think that I’ve learned enough knowing that there’s a trend in every period – there’s always something new to know about in terms of style, ingredient, and technique.

I choose to focus on using local Indonesian spices and barbecue grill in a classic way. Slow cooking method, particularly the traditional way used in the old times by Indonesian mothers, results in distinctive taste in each of my cooking. And this is what I’m crazy about.

Talking about Inspiration
Taking cooking seriously, I normally get my ingredients delivered fresh from local farmers. On not-so-busy day I take a stroll to local markets and grabs some fresh seasonal stuff and get inspired. Kedonganan, a famous Bali market for seafood and fish is one of my favorites. I’m always inspired by the way our ancestors cooked traditionally, the local fishermen and farmer in their working process, and those unforgettable family recipes. Seeing people enjoying my food and remember it – not me – feeds my passion in culinary even more. I’m that kind of person who love to talk and make friends, traveling to new places with its beautiful scene and beautiful new people. You will see me stuck in my kitchen in the south peninsula of Bali, Nusa Dua, most of the time. But on good days, I’ll be out of my nest and explore the world, bringing home more inspiration, to be served on the table to you.

Bali Cardamon

The year was 2009. Chef Ron opened the first restaurant business in the famous Tanjung Benoa area, specializing in Seafood Grill cuisine Chef Ron and his team is taking a chance experimenting with the archipelago’s heritage recipes. Bali Cardamon has been recognized as one fame restaurant in Bali recommended by the Trip Advisor. Available for family private dinner and lunch as well as private small party, Bali Cardamon opens its door for loyal customers daily.

Glaze Bali

Set in Bali’s most eminent tourism area of Tanjung Benoa, Nusa Dua, Glaze Bali restaurant is Chef Ron’s second born in 2012. This authentic Indonesian bistro shows off its specialty in grilled steak, seafood, and ribs. Listed as Trip Advisor’s most recommended restaurant in the south tip of Bali Island, Glaze Bali can host family gathering events, small group party, or grill event party.

Chefs Room

This special dining space is like a private working area where Chef Ron channels his passion in culinary art while welcoming the special guests. Beginning its journey in year 2018, the restaurant offers an exceptional experience of enjoying Chef Ron’s ‘Special of the Day’, a choice of coffee, or taking part in a rewarding cooking class. At Chef Room, guests will be served with the original taste of Indonesian and Balinese cooking along with the story of the spices used in the menus. Guest’s dining experience at Chef’s Room also includes personalized service of private set menu for small group. The menu’s availability changes regularly, depending on what is offered fresh in the local farm and fish market. Supporting the development of Indonesian heritage culinary recipes, cooking experience at Chef’s Room is all about learning and using traditional Indonesian and Balinese cooking techniques, such as taking advantage of the use of firewood in grilling process.

During the cooking class process, you’ll be introduced to a variety of Indonesian spices and their proper usage, the common way to cook them, and what’s the taste will be when it’s served on your family’s dining table.

Where to Cook

The cooking class conveniently takes place in the Chef’s Room. When it’s not, the class could be delivered in one of Chef Ron’s restaurants in Tanjung Benoa, Nusa Dua. Ingredients and cooking wares to be used in the class are all prepared by Bali Cooks.
