The Chef

From five-star hotel kitchens, to a cruise line, to a kitchen of his own.

Chef Ron's gastronomic journey began as an executive chef for several leading hotels across Indonesia, later taking him to a cruise line based in America — deepening his understanding of culinary art across cultures. It all started at tourism school, until that passion grew into his own business in 2009.

"Food can bring peace. Seeing people smile at the table — that's when I know I've truly succeeded."

He chose to focus on local Indonesian spices and classic grilling, paired with slow-cooking methods passed down by Balinese mothers — a way of cooking that produces a distinctive taste no machine can replicate. His ingredients are always fresh, sourced directly from local farmers and markets like Kedonganan, where he finds inspiration in fishermen, farmers, and family recipes handed down through generations.

Journey through Indonesia's rich spice heritage with a curated multi-course menu crafted by Chef Ronald N T — a chef with over a decade of dedication to bridging the aromatic soul of Indonesian spices with refined Western technique.

Each dish is prepared in a traditional Balinese Paon — an antique clay-and-brick, wood-fired stove with four cooking holes, fuelled entirely by wood and coconut husk. This ancient hearth infuses every plate with a subtle smokiness that modern kitchens simply cannot replicate.
